I have been absent a while, I know, roaming the mountains and plains and comeateries of Honduras. I’ll be back shortly with stories about a flopped beach trip and a not-flopped trip to Erandique. For now though, let me show you some of what’s been occupying me. <\/p>\n

\nI’ve been eating platos t\u00edpicos,<\/p>\n

\"\"<\/a>
\nAnd so many tacos,<\/p>\n

\"\"<\/a>
\nAnd baleadas that would knock your socks off,<\/p>\n

\"\"<\/a>
\nAnd plantain chips for days,<\/p>\n

\"\"<\/a>
\nAnd garlic shrimp and pork chops and tajadas and seafood soup,<\/p>\n

\"\"<\/a>
\nAnd grilled chicken with tortillas and horchata, overlooking the beach,<\/p>\n

\"\"<\/a>
\nAnd (excuse the blurry picture) green mangos so good I could cry,<\/p>\n

\"\"<\/a>
\nAnd our traditional not-very-Chinese Chinese rice and chop suey, <\/p>\n

\"\"<\/a>
\nAnd drinking gallons of coffee. <\/p>\n
